I think this place is called Tensho. It is located (like 90% of stuff here) in a hard to find alley in Shinbashi (I think). This was Lunch/brunch/snack on Day 2 (only a couple of hours after the Donburi).
First, this place has a jug of “Mystery sake” which is a brand/blend that is secret. It is served with a little dish of salt which is put on the rim of the box/cup like a tequila shooter. Licking your hand and putting salt on it is probably uncouth in this setting.

Appetizer (for sake) jelly fish, tarako and ume. The Ume works well as kind of like the lime for the salt and sake "shooter"
What we ordered was a special set of three different kinds of Soba.
The first, yuzu tasted like yuzu of course, but it was nicely balanced and didn’t taste like you were eating soba with citrus squeezed on it.
The second soba was a basic soba. Basic but really good. not mushy like most soba I have eaten before in restaurants.
Third was inaka which is sort of a country homemade style of soba. This was really good with a great al dente texture without being too gritty.
I think this may be a part of mini chain of restaurants but it was damn good.
